Chocolate Cherry Brownie

Today my husband’s grandfather passed away. We are all grieving, and while I didn’t know Tom very well, I know we shared a love of food – he was a very good cook, and I think he would approve of these brownies.  Here’s to you Tom.

Chocolate Cherry Brownies


  • 170g unsalted butter
  • 50g cocoa
  • 100g dark chocolate chips
  • 3 eggs
  • 350g brown sugar
  • 120g soft pitted prunes
  • 100g glace cherries
  • 125g self raising flour
  • 1/4 tsp salt

Preheat your oven to 180C, and melt the butter and chocolate together (microwave is fine). Then mix together the cocoa, sugar, flour and salt before whisking in the melted chocolate mixture.


When combined whisk in the eggs until smooth.


Dot the prunes and cherries around the 20cm lined cake tin, and smooth the mixture over the top.


Bake for around 35-40 minutes until the top starts cracking. Dust with extra cocoa powder straight after taking the brownie out of the oven.


Let it cool before slicing into squares and shoving into your face.
