Choc Banana Muffins

This is the recipe to use when you have bananas that are past their best. They are child friendly, but so delicious that adults will love them too, and you can get the kiddos involved in helping to make these because they are so simple.

There’s nothing wrong with a bit of child labour from time to time, in fact it’s a necessity. Putting them to work is the only way we parents can a) get revenge, and b) retain a teeny bit of sanity in the process.

Choc Banana Muffins

INGREDIENTS:

  • 3 overripe bananas
  • 125ml vegetable oil
  • 2 eggs
  • 100g brown sugar
  • 225g plain flour
  • 3 tbs cocoa
  • 1 tsp bicarbonate of soda (baking soda)
  • 50g choc chips (dark or white)

You know the drill – preheat your oven to 200C and place your muffin cups or papers in a 12 hole muffin tin.

Mash up your bananas – they don’t have to be super pureed – you can leave some lumps if you like, then beat in the oil, eggs and sugar until combined.

Now add the flour, cocoa and bicarbonate of soda and beat in, and then quickly stir in the choc chips – but don’t overdo it – tough muffins aren’t nice.

Spoon into the muffin cups and pop in the oven for 15 to 20 minutes.  You know they’re ready when a toothpick comes out clean.
